CHOOSE THE METHOD TO CREATE THE SUITABLE BIOFILM TO PRESERVE CAO PHONG ORANGE (Citrus sinensis Osbeck)

Abstract

The purpose of this study is to choose a suitable method of coating from
saponin in combination with chitosan and acetic acid to preserve Cao Phong
orange. The experiment is implemented by using two methods named, spraying
and embedding method. The results show that the embedding technique is
superior than the spraying one in several metrics which, was the hardness
reduction of less than 0.822kg/cm2; slower color variation, after 8-week
preservation the change of color level from 0.941 to 8.213; content of total soluble
solids changed more slowly than 0.806oBx; the lower weight loss by 0.465%; the
respiration rate less than 0.988ml CO2/kgh; change of vitamin C content lower than
1.499mg/100g. Specifically, by using embedding method Cao Phong orange had
better sensory properties and decomposition rate is 0.969% lower than using
spraying method. Therefore, it is a good way to choose the embedding method to
create the coating layer to preserve Cao Phong orange
