STUDY ON RECEIVING CRUDE PECTIN FROM COFFEE PULP

Abstract

In this paper, the optimum conditions for extraction of crude pectin from coffe pulp were investigated. The factors that were studied include: grain sizes coffee pulp, solvent/pulp ratio, extraction duration, temperature, pH extraction. The optimum condition has been found at: grain size-0.7x0.7 mm; solvent-H2SO4; solvent/pulp ratio-19/1; temperature-100oC; pH-1; extraction duration-1 hour. The amount of pectin in optimum conditions was 12.22%, the crude pectin/coffee pulp was 16.25%.
