The Initial Survey of The Relationship between The Quantity of Ergosterol and The Quality of Paddy Rice

Abstract
The relationship between ergosterol content and grain quality of rice was examined. There existed a significant positive relationship between the extent of ergosterol content and mould infection of paddy rice after 6 months storage (R2 = 0,7963). Ergosterol content has a reverse relationship with some quality factors, such as protein content, starch content and contaminant ratio. The quality of grain rice was highest when the ergosterol content less than 2 μg /g and lowest when ergosterol content more than 4 μg /g
