SELECTION AND STUDY ON THE CONDITIONS OF FERMENT A TION TO PRODUCE ß-GALACTOSIDASE FROM ASPERGILLUS ORYZAE

Abstract
Three Aspergillus oryzae strains producing galactosidase were selected from 29Aspergillus strains of laboratory. One of them, A. oryzae 3, has ability of producing highestactivity of galactosidase and was chosen to study the conditions of fermentation to produce galactosidase.The culture selected was MT4 with optimum cultural conditions for maximum enzymeproduction were lactose, supplementation with I g of pepton and 0.5 g of NH.NOJ and acultivation time of 3 days at 200 rpm and 30°C. Further studies are required to definitecharacterization of galactosidase from A. oryzae 3.
