This article focuses on the changes of Cốm processing business and Vong trade village influenced by the development of the market economy and urbanization. Cốm Vòng (a kind of pounded young rice produced in Vong village) - a well-known special food in Hanoi has made stories, folk songs and memories of many people. The author also examines basic factors that have made this food special: Cốm processing techniques (selection of raw materials, tools and ways of processing Cốm), division of labour in terms of gender and age, classification of Cốm and its features, consumption. In recent times, the specialty of Cốm and Vong trade village has been diminished by rapid development of the market economy and urbanization.
