Spray drying is a modern technology approach for converting herbal extracts from liquid or concentrated extract forms into stable dry powders with enhanced physicochemical properties and broad applicability in pharmaceutical formulations. Herbal liquid extracts often have poor stability, susceptibility to oxidation, and difficulties in storage, handling, and standardization. By rapidly transforming atomized feed droplets into dried particles through contact with a hot air stream, spray drying enables efficient moisture removal while preserving bioactive compounds. Besides, this technology ensures improved flowability, controlled particle size distribution, enhanced solubility, and consistent quality of the resulting dry powders. This article provides an overview of the process principle, structure components, operational parameters of spray drying systems, with emphasis on factors influencing powder recovery efficiency, moisture content, and particle characteristics, the role of drying carriers is discussed in relation to optimizing process for many herbal materials. Additionally, this article also presents some studies published on this spray drying technology.
