Factors influencing the fermentation process of gooseberry (Phyllanthus acidus) juice

Abstract
This study investigates the fermentation conditions of gooseberries (Phyllanthus acidus) to develop a beverage with enhanced nutritional value, focusing on key factors including sugar concentration, yeast inoculation rate, fermentation time, and temperature. The results demonstrate that all examined variables significantly influence fermentation efficiency (p < 0.05), with optimal conditions identified as 50% sugar, 3% yeast, a fermentation temperature of 30°C, and a duration of 5 days. Under these conditions, the ethanol content reached 0.55 ± 0.01% (v/v), accompanied by a marked reduction in °Brix and a slight increase in pH, indicating effective sugar conversion and moderate acid reduction. The final product exhibited low alcohol content, a balanced sweet–sour profile, and a distinctive aroma, reflecting its suitability as a naturally fermented beverage and its potential for adding value to locally sourced raw materials.Downloads
