Tóm tắt

Nghiên cứu nhằm so sánh thành phần hóa học và hoạt tính kháng vi sinh vật của cao chiết trái Bần chua (Sonneratia  caseolaris L.) non và già thu hái tại tỉnh Hậu Giang, đồng thời đánh giá khả năng ứng dụng trong bảo quản thực phẩm. Cao chiết EtOH từ trái Bần non và già được điều chế và phân tích thành phần hóa học. Hoạt tính kháng vi sinh vật được khảo sát đối với 10 chủng vi khuẩn và nấm Colletotrichum gloeosporioides bằng phương pháp khuếch tán giếng thạch. Hệ nhũ tương chứa cao chiết được bào chế và đánh giá khả năng bảo quản salad. Kết quả cho thấy cao chiết trái Bần non có hàm lượng flavonoid cao hơn trái già, trong khi hàm lượng phenolic tương đương. Cả hai loại cao chiết đều thể hiện hoạt tính kháng vi sinh vật mạnh. Đặc biệt, hệ nhũ tương chứa cao chiết ở nồng độ 0,5-1% có khả năng bảo quản salad hiệu quả trong thời gian 7 ngày ở 4 °C. Kết quả nghiên cứu đã minh chứng tiềm năng ứng dụng của cao chiết trái Bần chua trong phát triển chế phẩm bảo quản thực phẩm tự nhiên.
