Abstract

The paper presents the results of study on the effect of moisture content on physical thermal properties and freezing time of pangasius fillets, when the moisture content increases by 1,0 %, thermal conductivity (l) increases by 1,0 %. , specific heat (c) increased 1,8%, enthalpy increased 1,2% and freezing time (t) increased 1,3 %.
