Model for predicting O2 and CO2 concentration in modified atmosphere based on enzyme kinetic principle

Abstract

Based on enzyme kinetic principle of Michaelis - Menten with four types of inhibition respiration in an enzyme kinetics model and using closed system experiment, were developed model of predicting O₂ and CO₂ concentration in modified atmosphere packaging. Prediction model was tested by LDPE, PempSX and OTR membrane for Hung Yen papaya and Moc Chau mango. The applicability of the model to in predicting was successfully verified with the experiment data for these packaging membrane.
