PROCESSING OF CUCUMIS MELO L. POWDER BY FREEZE- DRYING METHOD

Abstract

To get the best out of Cucumis melo L. in postharvest, we made the melon powder to diversify products in the market, advance nutrient’s value. The melon juice was added maltodextrin to soluble solid content 190Brix, freezed and freeze-drying. The product which after processing had still high nutrition, great performance recovery, characteristic colour, good sensory quality.
