THE SITUATION OF PRESERVATION OF AQUATIC INGREDIENTS AFTER HARVEST AND FOOD HYGIENE AND SAFETY AT THE BUYING AND TRANSPORT ESTABLISHMENTS
Abstract
Ensuring the quality and hygiene of food safety for (nlts) raw materials is necessary for
domestic consumption and export. The study has focused on assessing the situation of
preservation of nlts and the state of food safety at the buying and transport
establishments in the distribution chain. By the method of collecting the secondary
document, the same interview, monitoring related subjects in the distribution chain, has
built up the plan for purchasing, transporting nlts' s acquisition and transportation.
Starting from farming and catching through intermediate stages to bring up processing
or retail establishments. In the process of distribution of nlts is forwarded to the
purchasing establishments including purchasing agents, vựa, and leads. The main
activities in these locations are described, and the mistakes in preservation affect quality
and loss of atvs. The study also assessed the level of security of nlts through examination
of microorganisms, instructions on hygiene and microorganisms of samples collected
by samples. The sample is not met by the ministry of health as prescribed by the ministry of health, 46. 66% in the basket and fishing ports ; 41. 33% at retail markets and lead markets. The final part of the study suggests that the quality of nlts and ensure atvst by adopting the combination of schools, research institutes, management agencies and the same society, construction.
