EXTRACTION OF PECTIN FROM POMELO PEEL UNDER LOW PRESSURE CONDITION

Abstract

In this study, pectin was extract from pomelo peel using hot acid solution
under low pressure condition. The experimental results showed that the ratio
of raw material: acid solution, acid concentration, temperature and time have
effects on the pectin yield. At 80o
C, 1.5 hours, the ratio of raw material: acid
solution of 1:20 g/ml, acid concentration of 8%, the pectin yield was highest
(19.21%). The purity and DE index of product were 74.39% and 54.41%,
respectively. The pectin extracted in this study can be categorized as high
methoxyl pectin (HMP). Additionally, a by-product of this process is pomelo
essential oil extract.
