SIMULATION BEEF FREEZING AND EVALUATE THE FACTORS AFFECTING THE FREEZING PROCES

Abstract

This paper presents simulation results of beef freezing process by Ansys software. Based on the simulation results to determine freezing time, evaluate influencing factors such as velocity, air temperature on freezing time. With the velocity of air ranging from w = (5 -15) m.s-1 , when the freezing velocity increased by Ñw = 1 m.s-1 the time reduction was on average Ñt = (6,5- 2,0)%, With all freezing temperatures ranging from te = (–45 - –35) °C, when the freezing temperature was reduced by Ñte = 1 K, the time reduction was on average Ñt = (3,2 - 2,5)%.
