Study on the viscosity properties of okra mucilage

Abstract

   Okra is a popular vegetable with high nutritional value. We extracted the Okra mucilage with concentrations of 10%, 15% and 20% from okra that we bought at the local market. We have studied okra mucilage viscosity characteristics. The results showed that the okra mucilage had a high viscosity. The Okra mucilage shows shear thinning behavior. Not only has a high shear viscosity, the Okra mucilage shows stretching phenomenon and exhibits a very high extensional viscosity, hundreds of times higher than that of the shear viscosity. In addition, the master curves for the shear viscosity, it was shown that as the concentration increased, the pseudoplasticity of the okra mucilage also increased.
