Abstract

In this study, Maillard reaction products of chitosan-glucose (CTS/GC) solution were prepared from irradiated chitosan (CTS) depolymerised by Co-60 gamma irradiation and glucose (GC). The reaction conditions were investigated, particularly temperature, reaction time and CTS/GC ratio.
