Abstract

    The article introduces and analyzes the culinary life of the Nung Chao people in Bao Lam border commune, Cao Loc district, Lang Son province today. The context is that economic, social and cultural exchanges take place strongly in the border area, which has gradually changed the cultural elements in general and culinary culture in particular of the Nung Chao people in Bao Lam commune. The change in cuisine includes changes in ingredients, processing methods, the variety of food and drinks, and the way to enjoy each dish and drink. On the basis of assessing the current status of impacts, positive and negative factors, the article initially proposes some recommendations to contribute to preserving and promoting the culinary value of the Nung Chao people at the study site. also contribute to preserving and promoting the fine traditional cultural capital of this ethnic group in the context of integration and integration in the current Vietnam-China border region.
