Assessing the actual realities of hygiene in the pork-selling places and some solutions to improve the quality of food hygiene and safety in some markets in Tuy Hoa City, Phu Yen province

Abstract

In order to assess the current realities of food hygiene and safety of the fresh pork during the process of distribution and display for sales in Tuy Hoa city, 3 traditional markets were investigated through interviewing butchers and sample tests. The results showed that the rate of pork samples reaching TCVN 7046:2002 accounted for 64,17%, the rate of unsatisfactory samples for TCVN 7046:2002 accounted for 35,83%. In general, there are still many problems regarding the hygiene at the markets in general, and at the pork-selling places in particular. Much attention should be made to the issue of food hygiene and safety at the form of displaying the pork in such places.
