Processing and conservation of traditional food of the Tay.

Abstract

The Tay was ethnic group mainly residing in North East region of Vietnam, living next to the Viet with a long traditional culture. Food culture of the Tay has a lot of characters including 20 ways of traditional food processing with 3 cooking modes: with fire, without fire and combination of both. For food conservation, drying or dry over the fire are mainly used. Due to the fact that the Tay lives very close to the Viet, therefore, they also learned some food processing ways from the Viet.
