Pa Then ethnic group currently lives in the provinces of Quang Binh, Bac Quang (Ha Giang province), and Chiem Hoa (Tuyen Quang province). They regularly communicate with the larger Tay and Kinh groups. Through this communication they are familiar with processing many new dishes such as boiled chicken dipped in a mixture of salt and essential lemon, baked pork, and lean pork paste, etc. In addition, they maintain some of their traditional dishes such as steamed glutinous rice that comes in various colors, a kind of rice cake which is as big as mouth of a traditional pot, chicken fried with saffron, stir-fried duck, baked pork and grilled fishes. These dishes present more or less the particular features of the Pa Then ethnic group which should be preserved and developed in the context of the market economy and wide-open cultural integration nowadays.
