Owing to current development trends, together with the profound changes taking places in all domains throughout the country, the eating and drinking habits of the San Diu in Tuyen Quang province have changed. Such factors as the types of food, dishes prepared, the structure of the meal, ways of processing food, and related manners, have been altered. Through fieldwork in some of the villages and hamlets in Thai Nguyen province where the San Diu live, the article aims to expose some of the details related to these changes, and to investigate the causes of such change. This study of the San Diu shows both the positive side of cultural exchange and integration, as well as the negative side of these changes. The author also suggests solutions to preserve the group’s traditional practices surrounding eating and drinking
