The article describes the food culture of some ethnic minorities from high mountainous area in the North such as Hmong, Ha nhi, Lo Lo (over 2000 meters high), Dao (over 600 meters high) and Thai, Tay, Giay, Nung (over 300 meters high). The food culture, historical traditions and culture of such ethnic minorities is closely related to the ecological environment within which they exist. Nevertheless these cultures have changed with the impact of the market economy and tourism.
