Factors affecting the freezing process of black tiger shrimp using air freezers – Research by lecturers Southern Agricultural College

Abstract

The paper presents results on the variation of freezing time of black tiger shrimp depending on the freezing temperature, wind speed, and heat exchange cross-section on the surface of the shrimp body. Research results show that parameters such as freezing temperature, wind speed, and raw material size play a key role in shortening freezing time, minimizing energy consumption, and minimizing mass loss during the freezing process.
