Abstract

The paper presents results on the variation of freezing time of black tiger shrimp depending on the freezing temperature, wind speed, and heat exchange cross-section on the surface of the shrimp body. Research results show that parameters such as freezing temperature, wind speed, and raw material size play a key role in shortening freezing time, minimizing energy consumption, and minimizing mass loss during the freezing process.
