Abstract
The Southeastern Region of Vietnam is an area of co-habitation for various ethnic groups, among which the Ma, Cho ro, and Xtiêng people have lived for a considerably long time. Living together in a natural environment with certain similarities, these ethnic groups share common ground in some customs and practices, particularly in the way they exploit the natural environment to process food to meet their daily needs. Alongside other cultural forms, the folk cuisine of these ethnic groups has contributed to creating a diverse cultural landscape, serving as a resource for tourism exploitation.
