EFFECTS OF SOME FACTORS ON THE QUALITY OF CUMMY CANDY OF RED PITAYA
Abstract
Red pitaya (Hylocereus polyrhizus) belongs to the cactus family (Cactaceae), is a tropical plant that brings many benefits to human health thanks to its high nutritional value and biologically active compounds, including natural antioxidants. The goal of the research was to initially develop a recipe for making red-fleshed pitaya gummy candy by surveying the additional ratio of red flesh and gelatin, helping to diversify gummy candy as well as increase the value of this fruit. Research results showed that the addition of 20% red pitaya extract and 12% gelatin contributed to creating a moderately flexible structure, characteristic color and flavor for gummy candy, with a good sensory quality score.
