Research on the production process of nutrition powder from soybean sprouts

Abstract

Soybeans sprouts contain numerous important nutrients needed by humans. The production of nutritional powder has increased the value of the product. Nutrient powder quality from soybean germination is greatly influenced by the production process. For best quality soybean sprouts, especially high vitamin E, soybeans grains should be soaked for 8 hours at 30ºC and then incubated for 96 hours. Soybean sprouts were dried at 50°C for 8 hours reducing seed moisture to 9.67% concurrent maintaining the best quality of soybean germination, especially vitamin E content (14.43 mg/kg). The product is crushed several times to obtain nutrient powder from germinated soybeans of good quality.
