RESEARCH FOR BEVERAGE MANUFACTURING FROM NONI FRUIT COMBINATION WITH PINEAPPLE

Abstract

Soft drinks are a very popular and indispensable food in life. Noni fruit (Morinda citrifolia) has been used in folklore of many countries around the world as a beverage with many refreshing properties that can be used for prevention and treatment of diseases. In our country Noni is a fruit known for its many medicinal properties. Noni trees are found in many rural areas in the East and Southwest. However, due to the unpleasant smell and taste, noni juice is often mixed with some other tropical fruits. Pineapple (can be called Thơm) is a very popular fruit in Vietnam. The most commonly used product form today is fermented noni juice or soaked noni. The research results of this article aim to provide a product that is mixed with pineapple fruit juices to create a pleasant smell and bring many benefits to users
