Slaughtered situation and control, contamination of Salmonella and E. coli bacteria in chicken meat at Thai Nguyen city
Abstract
Current status of chicken slaughter in Thai Nguyen city is mainly implemented by private sector. The slaughterhouses are temporary with manual tools, having no rules and regulations and running in the residential areas. In geneeral, they do not meet the minimum standards for a slaughterhouse required by the management agenecies. The result of testing 120 fresh chicken meat samples showed that, there were 36 positive samples with E. coli bacteria identifed, accounting for 30%, the prevalence fluctuated from 26.67 to 30%. There were 8 positive samples with Salmonella bacteria identified, occupying 6.67%, the prevalence fluctuated from 3.33% to 10%, The poultry meat samples at the temporary selling kiosks were infected with Salmonella and E. coli with the rate of 8.96 % and 37.31% respectively. Meanwhile, in the managed kiosks, the chicken meat sample rate infecting with Salmonella and E. coli was 25% and 5% respectively. After 8 hours of slaughtering, the chicken meat samples infecting with Salmonella and E. coli was 7.09% and 31.5%, respectively.
