Status of preservation and quality of tuna in Khanh Hoa province

Abstract

Face to face interview was conducted to survey the 75 tuna fishing vessels and 10 tuna buyers in Khanh Hoa province in 2020. The results of this study showed that local fishers used tuna storages with two types of insulation materials, namely EPS and PU; the insulation thickness of the tuna storages ranged from 10 ÷ 25 cm and mainly from 15 ÷ 20 cm; under quality standard products were accounted from 19 ÷ 21% in terms of individual fish and from 20 ÷ 21% in quantity; there were some inadequacies in the handling and preservation of fish, which affected the quality of the products.
